Natural Process Coffee Explained: What It Is and Why It Matters

Pick up a bag of specialty coffee and you'll often see a word tucked beneath the origin: *washed*. Or sometimes *natural*. Or *honey*. These aren't descriptions of what the coffee tastes like — they describe how it was made. Specifically, how the coffee bean was separated from the fruit that surrounds it before it was dried and shipped.

It's a small detail that makes an enormous difference to what ends up in your cup.

This post is about the natural process: what it is, how it works, and why it's responsible for some of the boldest, most fruit-forward coffees in the world. First: what is a coffee cherry?

Most people are surprised to learn that coffee beans are seeds from a fruit. The coffee cherry — named for its resemblance to a small red cherry — grows on trees, usually at high altitude in tropical regions around the world. When ripe, it's bright red (sometimes yellow), roughly the size of a cranberry, and sweet to taste.

Inside the fruit are two seeds sitting face-to-face, each wrapped in a thin papery skin called parchment, surrounded by a sticky layer of mucilage (the innermost fruit pulp), all enclosed by the cherry's outer skin.

Processing is the step that removes all of that and leaves you with just the dried seed — the green coffee bean that will eventually be roasted. Natural processing takes the most direct route of all: it removes nothing until the very end.


How the natural process works

Natural processing — sometimes called the dry process — is the original method of turning coffee cherry into coffee bean. It's also, in a sense, the simplest: no machinery, no water, just fruit, sun, and time.

1. Picking

As with any process, quality starts with the cherry. Ripe fruit is harvested, ideally by hand, so that only fully ripe cherries make it to the drying beds. Because nothing is removed before drying, underripe or damaged cherries have nowhere to hide — their flaws end up in the cup.

2. Drying - whole

This is where natural processing diverges completely from washed. There's no pulping and no fermentation tank. The whole cherry — skin, pulp, and seed together — is spread out on raised beds or drying patios and left in the sun.

3. Weeks in the sun

Drying takes considerably longer than for washed coffee: typically three to six weeks, depending on the climate. The cherries are turned by hand regularly, and often gathered into mounds overnight to protect them from dew and moisture.

4. Slow fermentation, from the outside in

As the fruit dries, it doesn't just sit there inertly — it ferments gently, and the sugars and flavour compounds in the pulp gradually work their way through the parchment and into the bean itself. This slow, fruit-soaked drying is what gives natural coffees their signature intensity.

5. Hulling

Once the dried cherry reaches the target moisture level (around 11%), the dried fruit and parchment are milled away in one step, and the green beans are sorted, graded, and readied for export.


Natural vs washed vs honey: what's the difference?

It helps to see the washed process alongside the other two main approaches.

Natural (dry) process keeps the whole cherry intact throughout drying. No pulping, no washing — the coffee dries as-is, fruit and all, for several weeks. The sugars and flavours from the fruit gradually seep into the bean, producing coffees that tend to be rich, sweet, and intensely fruity — often with blueberry, strawberry, or wine-like qualities.

Honey process sits in the middle. The skin is removed (like washed), but some or all of the sticky mucilage is deliberately left on the bean during drying (like natural). The amount of mucilage left on — described as yellow, red, or black honey depending on quantity — produces different results: generally sweeter and more full-bodied than washed, but without the pronounced fruit character of a natural.

Washed removes all the fruit before drying. Without that fruit influence, what you taste is almost entirely the coffee itself: the variety of plant, the soil it grew in, the altitude, the care taken at every stage. A washed coffee is the most transparent of the three — it puts the bean's own character front and centre.

None of these is objectively better. They're just different expressions of the same raw material.


Why "wild" doesn't mean "flawed"

Natural coffees are sometimes described as wine-like, funky, or intense — language that can sound off-putting if you're used to a straightforward filter roast. It shouldn't be. In a well-made natural, those qualities are a sign of success, not a defect.

Because the whole cherry dries around the bean, natural processing lets the fruit's own sugars, acids, and aromatic compounds soak directly into the seed. That's where the deep berry, tropical fruit, and sometimes fermented or wine-like notes come from — not additives, not flavourings, just weeks of fruit and bean drying together in the sun.

This is also why naturals are the most expressive, least predictable of the three main processes. A washed coffee shows you the bean; a natural coffee shows you the bean and the fruit that grew around it, layered together. It's a bolder, less transparent style — and for a lot of coffee drinkers, that's exactly the appeal.


What can go wrong

Natural processing looks simple, but it asks a lot of the people doing it. Weeks of careful attention, with real consequences if something is missed.

Over-fermentation. If the beds are too thick or the cherries aren't turned often enough, the bottom layer ferments too fast in the heat, and the cup can turn from fruity to sharp, sour, or boozy in an unpleasant way.

Weather dependency. Natural drying needs steady sun over several weeks. A run of cloudy or rainy days during that window can stall drying and risk mould.

Inconsistency. The very quality that makes naturals exciting — individuality, character — also makes them harder to standardise. Two beds from the same harvest, dried a little differently, can taste noticeably different.

A well-managed natural, dried carefully and consistently, is one of the most rewarding styles in coffee. A poorly managed one is a write-off. The difference comes down entirely to the grower's skill and attention.


A washed coffee worth trying

Ethiopia is the natural process at its most expressive — coffees from washing stations like Dumerso, worked by growers who dry small, carefully tended lots on raised beds over several weeks, regularly turn up blueberry, strawberry, jasmine, and dark chocolate in the cup, all from fruit and sun alone.

But naturals aren't only an Ethiopian story. Brazil, Rwanda, Uganda, and Mexico all produce excellent natural-processed coffees too, each with its own character depending on variety, altitude, and how the drying is managed.
