Washed Coffee Explained: What It Is and Why It Matters
Pick up a bag of specialty coffee and you'll often see a word tucked beneath the origin: washed. Or sometimes natural. Or honey. These aren't descriptions of what the coffee tastes like — they describe how it was made. Specifically, how the coffee bean was separated from the fruit that surrounds it before it was dried and shipped.
It's a small detail that makes an enormous difference to what ends up in your cup.
This post is about the washed process: what it is, how it works, and why so many of the world's most celebrated coffees are made this way.
First: what is a coffee cherry?
Most people are surprised to learn that coffee beans are seeds from a fruit. The coffee cherry — named for its resemblance to a small red cherry — grows on trees, usually at high altitude in tropical regions around the world. When ripe, it's bright red (sometimes yellow), roughly the size of a cranberry, and sweet to taste.
Inside the fruit are two seeds sitting face-to-face, each wrapped in a thin papery skin called parchment, surrounded by a sticky layer of mucilage (the innermost fruit pulp), all enclosed by the cherry's outer skin.
Processing is the step that removes all of that and leaves you with just the dried seed — the green coffee bean that will eventually be roasted.
How you do that, and in what order, is where things get interesting.
How the washed process works
The washed process — sometimes called the wet process — removes the fruit from the bean before drying. Here's how it works, stage by stage.
1. Picking
Ripe cherries are harvested, ideally by hand so that only fully ripe fruit is selected. In washed processing, cherry quality at picking matters enormously — underripe or overripe fruit will affect fermentation and, ultimately, flavour.
2. Pulping
Shortly after picking, the cherries pass through a pulping machine that strips away the outer skin and most of the fruit pulp. What remains is the bean in its parchment, still coated in a thin layer of sticky mucilage.
3. Fermentation
The beans are placed in tanks — either submerged in water or left dry, depending on the producer's method — and left to ferment for anywhere from 12 to 72 hours. During this time, naturally occurring microorganisms break down the remaining mucilage.
This stage is critical. The fermentation window has to be timed carefully: too short and the mucilage doesn't fully break down; too long and the cup picks up a sharp, unpleasant sourness known as a ferment defect.
4. Washing
Once fermentation is complete, the beans are washed with clean water to remove any residual fruit. At this point, the bean is entirely free from the cherry.
5. Drying
The washed beans — still in their parchment — are spread onto raised drying beds or concrete patios and dried in the sun over one to three weeks. They're turned regularly to ensure even drying. Once they reach the target moisture level (around 11%), the parchment is milled off, the beans are sorted and graded, and they're ready to export.
Washed vs natural vs honey: what's the difference?
It helps to see the washed process alongside the other two main approaches.
Natural (dry) process keeps the whole cherry intact throughout drying. No pulping, no washing — the coffee dries as-is, fruit and all, for several weeks. The sugars and flavours from the fruit gradually seep into the bean, producing coffees that tend to be rich, sweet, and intensely fruity — often with blueberry, strawberry, or wine-like qualities.
Honey process sits in the middle. The skin is removed (like washed), but some or all of the sticky mucilage is deliberately left on the bean during drying (like natural). The amount of mucilage left on — described as yellow, red, or black honey depending on quantity — produces different results: generally sweeter and more full-bodied than washed, but without the pronounced fruit character of a natural.
Washed removes all the fruit before drying. Without that fruit influence, what you taste is almost entirely the coffee itself: the variety of plant, the soil it grew in, the altitude, the care taken at every stage. A washed coffee is the most transparent of the three — it puts the bean's own character front and centre.
None of these is objectively better. They're just different expressions of the same raw material.
Why "clean" doesn't mean "boring"
The word clean gets used a lot to describe washed coffees, and it can sound like faint praise — as if clean means plain, or thin. In coffee, it means the opposite.
A clean cup is one where the flavours are precise and uncluttered, where nothing interferes with your ability to taste the coffee itself. That transparency is what makes washed coffees so good at expressing origin.
If a farm is at high altitude, you'll taste it — altitude slows cherry ripening, concentrating sugars and acidity, and a washed process will show that clearly. If a particular coffee variety has a distinctive floral or citrus quality, the washed process will show you that too, without the fruit of the cherry getting in the way.
This is why so many of the world's most acclaimed single-origin coffees are washed. It's not that washed is better — it's that it's more revealing.
What can go wrong
Washed processing looks deceptively simple. In practice, a lot has to go right.
Fermentation timing is everything. The right window varies depending on altitude, ambient temperature, and the natural microbial environment at the mill. A few hours too long and the cup tips from vibrant to sour. Getting this right consistently takes experience.
Water quality matters. The wash after fermentation needs clean water — a real constraint in regions where water is seasonal or scarce, and one reason washed processing isn't used everywhere.
Drying requires attention over days and weeks. Drying too quickly can crack the parchment. Drying too slowly risks mould. The beans need turning regularly and monitoring throughout.
A well-managed washed coffee is a direct record of every decision made correctly. That's part of what you're tasting in the cup.
A washed coffee worth trying
