Pulped Natural Coffee Explained: Brazil's Water-Saving Compromise

Pick up a bag of specialty coffee and you'll often see a word tucked beneath the origin: washed. Or sometimes natural. Or, less often, pulped natural. These aren't descriptions of what the coffee tastes like — they describe how it was made. Specifically, how the coffee bean was separated from the fruit that surrounds it before it was dried and shipped.

This post is about pulped natural processing: the hybrid method Brazilian growers invented to solve a very practical problem, and one that's quietly responsible for a lot of the sweet, chocolatey, low-acid coffee in your cupboard. First: what is a coffee cherry?

A coffee bean is actually a seed from a fruit. The coffee cherry — named for its resemblance to a small red cherry — grows on trees, usually at high altitude in tropical regions. When ripe, it's bright red (sometimes yellow), roughly the size of a cranberry, and sweet to taste.

Inside are two seeds sitting face-to-face, each wrapped in a thin papery skin called parchment, surrounded by a sticky layer of mucilage — the innermost fruit pulp — all enclosed by the cherry's outer skin.

Every processing method is really just a different answer to the same question: in what order, and how thoroughly, do you remove all of that? Pulped natural takes a distinctive middle path.


The problem Brazil was solving

Until the 1990s, Brazilian coffee had a reputation problem. Most lots were dried the traditional way — whole cherry, skin and all, the natural process — which gave Brazil its sweet, heavy, chocolatey signature, but also a wide range of off-flavours whenever drying went wrong. Specialty buyers, chasing the clarity of fully washed Ethiopian and Central American coffees, often passed Brazil over.

The trouble was that fully washed processing needs a lot of water, for fermentation tanks and for washing the beans clean afterwards. The high plains of Sul de Minas and Cerrado, where much of Brazil's coffee grows, don't have the rivers and rainfall that Costa Rica, Colombia, or Kenya can lean on.

So Brazilian agronomists asked a simple question: what if the cherry's outer skin was removed, the way washed processing does, but the bean wasn't washed clean afterwards?


How pulped natural processing works

1. Picking

As with any process, quality starts with the cherry. Ripe fruit is harvested, ideally by hand, so only properly ripe cherries make it through.

2. Pulping

Shortly after picking, cherries pass through a pulping machine — the same first step as washed processing — which strips away the outer skin. What's left is the bean in its parchment, still coated in a layer of sticky mucilage.

3. No fermentation tank, no wash

This is where pulped natural breaks from washed. There's no soak in a fermentation tank and no wash with clean water afterwards. The sticky, mucilage-coated bean goes straight to drying — using a fraction of the water a fully washed process would need.

4. Drying on patios or raised beds

The beans dry in their sticky coat for around one to two weeks, spread thinly and turned frequently. That sticky mucilage is the trickiest part of the whole process — left too thick or turned too rarely, beans clump together and risk mould underneath.

5. Milling

Once the beans reach the target moisture level, the dried mucilage and parchment are milled off together, and the green beans are sorted, graded, and readied for export.


Pulped natural vs washed vs natural vs honey

It helps to see all four approaches side by side.

Natural (dry) process keeps the whole cherry intact throughout drying — no pulping at all. Sugars and flavours from the fruit gradually seep into the bean over three to six weeks, producing rich, intensely fruity coffees.

Washed removes the skin and all of the mucilage before drying, using fermentation tanks and a thorough wash. The result is the cleanest, most transparent expression of the bean itself.

Honey process removes the skin but deliberately leaves some or all of the mucilage on during drying — usually a Central American technique, and usually a deliberate flavour choice rather than a water-saving one.

Pulped natural also removes the skin and leaves the mucilage on, which can make it sound identical to honey — but the two come from different traditions and different goals. Pulped natural was developed in Brazil specifically to cut water use while keeping natural's sweetness, and traditionally uses a mechanical demucilager to strip off most (not all) of the sticky layer before a shorter dry. It sits closer to washed in the cup — cleaner and less fruit-forward than a honey or natural — while still carrying more body and sweetness than a fully washed coffee.

None of these is objectively better. They're different tools for different climates, water supplies, and flavour goals.


Why it changed Brazilian coffee's reputation

Pulped natural — semi-washed in English, despolpado in Portuguese — used a fraction of the water of fully washed processing, kept much of Brazil's natural sweetness, and dramatically reduced the risk of fermentation defects compared with leaving the whole cherry to dry.

Within a decade, Brazilian specialty coffee had a new reputation. Pulped natural is one of the reasons why — it let Brazilian growers hit a level of clean, consistent sweetness that put them back on the map for specialty buyers who'd previously written the country off as "just" a blending coffee.


What can go wrong

The sticky mucilage that makes pulped natural work is also its biggest risk.

Clumping and mould. Sugary, sticky beans want to stick together on the drying patio. If they're not spread thin and turned often — especially in the first day or two — moisture gets trapped between beans and mould can take hold underneath.

Demucilager calibration. The mechanical pulper has to be set correctly. Too aggressive, and it strips off so much mucilage the coffee ends up tasting closer to washed. Too gentle, and it behaves more like a honey process than intended.

Still weather-dependent, if less so than a full natural — the drying window is shorter, but it still needs consistent sun to avoid stalling partway through.

Done well, pulped natural gives you a genuinely distinctive middle ground: the body and sweetness of a natural, with far more of the day-to-day consistency of a washed coffee.


A pulped natural worth trying

Pulped natural is a rarer style on UK shelves than washed or natural — it's very much Brazil's own invention, and it isn't something we always have in stock.
