Why Altitude Changes How Coffee Tastes

Pick up a bag of specialty coffee and, alongside the country and the process, you'll often see a number followed by "MASL" — metres above sea level. It's easy to skim past. It shouldn't be. Altitude is one of the single biggest levers a coffee-growing region has over what ends up in your cup.

This post is about why that number matters, how it actually changes the coffee, and why a handful of countries — Ethiopia, Kenya, Rwanda, parts of Colombia and Guatemala — keep turning up at the top of specialty coffee lists as a result.

Slower ripening, more flavour

Coffee trees are fussy about temperature. Grow the same variety at sea level and again at 2,000 metres, and you'll get two noticeably different coffees — even before processing comes into it. The reason comes down to something quite simple: the higher you go, the cooler everything gets, and the slower everything happens.

At higher altitudes, average temperatures drop — roughly 1°C for every 150–200 metres of elevation gained. Cooler conditions slow the coffee cherry's metabolism, so it takes longer to ripen. A cherry that might turn from green to red in a matter of weeks at low altitude can take considerably longer higher up.

That extra time matters. While the cherry hangs on the tree longer, it has more time to build up sugars and organic acids, and the bean inside develops a denser, harder structure. Denser beans tend to roast more slowly and evenly, and they carry more of that built-up sweetness and acidity through into the cup — which is where the brighter, more complex, more fruit-driven flavours in high-grown coffee come from.

Lower down, the opposite happens: cherries ripen faster, beans are less dense, and the resulting cup tends to be softer, rounder, and simpler — not worse, just different. Brazil's classic lowland coffees, for example, are typically grown at 900–1,200 metres and lean into that mellow, chocolatey, nutty style rather than fighting for the bright acidity of a high-grown East African coffee.


A lever, not the only one

It's tempting to treat altitude as a simple scoreboard — higher is always better. It isn't quite that clean. Altitude works alongside soil, variety, shade, and how carefully a coffee is picked and processed. A high-grown coffee that's badly processed will still taste worse than a well-made lowland one.

What altitude does reliably give you is potential — the raw material for complexity. Above roughly 1,200 metres, coffee starts to develop noticeably more acidity and aromatic complexity. Above 1,600 metres or so, you're in the range where the brightest, most distinctive East African coffees are grown. Very few places in the world offer that combination of altitude, volcanic soil, and consistent rainfall — which is exactly why Rwanda, alongside Ethiopia and Kenya, punches so far above its weight in the coffee world.


The trade-offs of farming high

Growing coffee at altitude isn't free, and it isn't easy. It comes with real costs for the farmers doing it.

More flavour, more money. Specialty buyers pay a premium for the complexity that altitude brings, which matters enormously to smallholder farmers working tiny plots.

Slower harvests. Cherries ripen unevenly and take longer, meaning more passes up and down the same trees to pick only what's ready.

Harder land to work. Coffee at 2,000 metres is usually coffee on a steep hillside. Everything — planting, picking, carrying cherry to a collection point — is physically tougher than farming flat, low-lying land.

Frost and weather risk. The higher you go, the closer you get to conditions that can damage or kill a coffee tree entirely. Growers at altitude are always working near the edge of what the plant can tolerate.


What this looks like in the cup

Two of our own coffees this year make the point well. Rwanda Huye Mountain, our August natural, comes from farms sitting anywhere from 1,600 up to 2,300 metres on the volcanic slopes of Mount Huye — and it shows in the cup as loud, layered watermelon and strawberry, with real acidity carrying it through. Rwanda Ruli, this month's washed coffee, grows a little lower on the altitude scale at 1,800–2,100 metres, in the Gakenke hills further north — still comfortably in that high-altitude sweet spot, but showing it differently: cleaner and more restrained, tamarind and brioche rather than fireworks, because the washed process lets the bean's own character speak rather than the fruit around it.

Same country, similar elevation, completely different cup — because altitude is only ever one part of the story. It builds the raw material; process and variety decide what gets done with it.
