These Catuai varietal coffee cherries are picked once fully ripe with a deep red colour before fermenting in barrels for 34 hours. Once fermented the cherries are dried with their sweet, fruity pulp. It's these processes that are key to the development of the flavour precursors that we unlock through small batch roasting.
